Homemade Green Tamales

Delicious as the flavor of Mexico


Tamales are a typical dish of Mexican Cuisine often they are cooked for Christmas and Candelaria day, but in reality any time is a good time for some delicious tamales.


Tamales are prepared with cooked corn dough, wrapped in corn husk and filled with different stews such as beef, chicken, vegetables or peppers, and they can be sweet or salt.

INGREDIENTS FOR THE DOUGH
  • 200 gr of lard

  • 300 gr flour for tamales

  • 1 cup of chicken soup

  • 1 tbsp of baking powder

  • 1 tbsp of salt

  • 1 tbsp of pepper

  • 1 liter of water


INGREDIENTS FOR THE FILLING
  • 400 gr of green tomato

  • 3 serrano peppers (the number of peppers depends on how spicy you wanted)

  • 1 garlic clove without skin

  • 2 pinches of salt

  • 11 pinch of black pepper

  • 1 cooked chicken breast and crumble

  • 10 tamal corn husk of Mamá Chedes, previously soaked



PREPARATION

1.- First we're gonna make the dough, starting to soften the lard in the blender for 5 minutes.


2.- Let's add the chicken soup on the tamal flour little by little until you get a dough, but be careful that it doesn't get so liquid.


3.- Then we're gonna mix the lard with our dought and the baking powder, add some flavor as you want and let it rest.


4.- Now the sauce, let's put the water in a cooking pot on medium heat with the green tomatoes, the garlic and the onion for 10 minutes, then we gonna remove the water and blend it, ¡we are above to finish!


5.- In another pot over medium heat, we are gonna put the sauce and the chicken crumble and finally let them rest for 5 minutes.


6.- On the corn husk of Mamá Chedes, let's put 2 big spoons of the dough and we gonna distribute it all over the husk then we gonna add 1 spoon of the chicken sauce.


7.- Finally we're gonna bend the 2 parts of the husk and tie it up with an other piece of the same husk, repeat the same steps until your dough finally ends.


8.- ¡Time to eat!
